What is Peanut Butter Bread?

Peanut Butter Bread is a bread recipe invented during the Great Depression. At that time people did not have as much money, and it was difficult for people to keep perishable foods in the house. A creative cook came up with this recipe for a bread that does not use eggs or oil, but instead used shelf-stable peanut butter!

How did I make this a high protein bread?

When I looked at the original recipe for this bread, I made a few changes. I increased the peanut butter, as peanut butter does have a fair bit of protein and plant fats. I also replaced the flour with chickpea flour, my favorite higher protein flour replacement.

You can get Chickpea flour (also known as Besan) at any large grocery store or East Indian grocery store. Chickpea flour adds protein and is not very expensive. I know that’s important to lots of my readers; it’s certainly important to me!

What is the bread like?

The High Protein Peanut Butter Bread that you get from this recipe tastes rich and peanut buttery. It’s perfect for Peanut butter lovers! If you cut the crust off, you get a soft bread that is easy to chew and would be a good choice if your loved one struggles with eating harder foods. If you cut a slice into quarters, your loved one with dementia can easily hold it when they eat it, so it makes a great finger food! Most importantly one slice contains 12 grams of protein and it costs about 62 cents a slice to make!
